How to Make Highlands Corned Beef Empanadas

Fried or baked, which way of empanadas do you like most?

Empanada is one of my family’s favorite snacks, our preferred fried empanada. The crusty dough and tasty filling are truly savory snacks to enjoy. Everyone has their own way of cooking empanada preferred filling. Let me share with you my empanada recipe, where I used Highlands Corned Beef as the filling.

Ingredients

  • ½ cup butter
  • 2 cups flour
  • ½ tsp baking powder
  • 2 tsp sugar
  • 1 large egg
  • ¼ water
  • Small amount of salt
  • 2 can Highlands Corned Beef
  • Onion
  • Garlic
  • 1 quart of oil for frying

PROCEDURE

In a bowl combine flour, baking powder, sugar and salt.  Whisk together. Cut butter into flour using hand or pastry cutter. Add water, egg and mix until forms into a dough. Knead the dough until smooth. Wrap dough in a plastic and refrigerate for at least 1 hour.

Heat 2 tablespoons of cooking oil in a pan. Ass the onion, garlic and cook until tender. Add on the Highlands Corned Beef, stir frequently until slightly browned. Set aside in a bowl.

Form the dough into balls, like 2 to 3 inches. Roll each dough ball into a thin circle. Spoon some of Highlands Corned Beef filling onto the center, and then fold into half circle shape. Seal edges by pressing with fingers. You can as well use the empanada molder for easy and fast making.

Heat oil in a deep-fryer and then place two to 4 pies into the fryer. Cook for about 5 minutes, turning once to brown on both sides. Drain the excess oil with paper towels.

Serve and enjoy!

    I’ve never tried making empanada. My late sister used to make it (and galantina) on holidays. They were her specialties. It seems easy enough to follow your recipe. I might give it a go one of these days just to honour her. I’ll use Highlands also, just to be sure of the ingredients.
