Home-made Buko Pie

Needed Ingredients:

Crust

2 cups all-purpose flour

1/3 cup butter

2/3 cup shortening

¼ cup cold water

1 tsp vinegar

1 tsp. salt

1 pc eggyolk

Filling

1 can condensed milk 3oo ml.

1 cup coconut juice/water

3 cups young coconut meat

¾ cup white sugar

2/3 cup cornstarch

Cooking Procedure for the Crust

Combine flour, egg yolk, vinegar and salt then mix. Add butter and shortening, mix using a pastry mixer. While mixing the ingredients, add slowly the cold water. When all ingredients are completely mixed, gather the mixture and divide into two equal parts. Using a rolling pin, flatten each of the dough until wide enough to fit on the preferred cake pan to use. For the crust base arrange the dough over the cake pan. Set aside the other though, this will be used as cover of the pie after putting the filling in the crust base.

Cooking Procedure for the Filling

In a saucepan, combine all filling ingredients. Cook and constantly stir till thicken. Once the young coconut is cooked and the filling is thick, let it cool for minutes then pour into prepared crust. Cover the crust based with the desired design. Bake for 1 hour to 1.5 hours at 425 degrees F.

Let cool and serve!

What is Buko Pie (Coconut Pie)?

This is a traditional delicacy of Filipinos. My son loves this much, especially when it is cold. Buko pie is a source of calcium and iron, and very high in calories and protein.

    Oh my, it looks yummy! I bet it’s pretty challenging to create buko pies kasi dapat talaga marunong ka pumili ng buko in the first place diba. The fresher the buko is, the yummier it will be. You made it look simple though. Parang ang sarap i-try using your recipe hihi

    I love buko pie. When somebody went to Laguna,l and Tagaytay, there will always be buko pie pasalubong. But those arent the same as before na masarap. Yours look so yummy tlaaga! Plus, the baker looks really serious ha.
